Skillet Meal

   Scrub potatoes; cook in boiling salted water until tender. Drain and let cool 15 minutes.

   In medium skillet, fry bacon until crisp.

   Pour off all but 2 tablespoons of drippings.

   Peel and cube potatoes.

   Add potatoes, onion, salt and pepper to skillet. Cook, stirring, until potatoes are brown and onion is tender. Sprinkle cheese evenly over top.

   Break eggs into skillet, stirring constantly, over low heat until done.
