In a 10 inch (for thicker brownies) or 12 inch (for thinner brownies) cast iron skillet, add butter and cream. Over medium heat, swirl butter in the cream until melted and bring to a simmer. Add in 8 ounces of the chocolate and turn heat down to medium low. Stir constantly until chocolate has melted, about a minute. Remove from heat and let cool slightly (about 3 minutes).

Add the melted chocolate into the egg and sugar mixture. Whisk well until blended. Fold in the flour mixture and mix well. Pour batter back into the skillet. Top with remaining 2 ounces of chocolate.
