Preheat the oven to 325 F. Have ready a rimmed cookie sheet lined with parchment paper or Silpat.

In a large bowl, mix together thoroughly all the ingredients except the chopped nuts/fruit. Make sure all the oats are coated with the honey mixture. Spread the granola onto the prepared baking sheet in an even layer.

Bake for 15 minutes. Remove pan from the oven and stir the oats well. Put pan back in the oven and bake for another 10-15 minutes, until golden. Keep an eye on it, because it can burn quickly.

Remove pan from oven and set it on a rack. Let the oats cool until room temperature. Stir in chopped nuts and dried fruit, then store in an airtight container up to 2 weeks.
