Ingredients: 3 tbsp olive oil; 1 medium onion, chopped; 5 clove garlic chopped; 2 1/2 inch piece of ginger chopped; 2 small courgette ( zucchini ) chopped into cubes; 1 1/2 lb sweet potatoes chopped into cubes; 1 tbsp smoked paprika; 1 can plum tomatoes; 250 ml pear, peach or pineapple juice; 150 grams smooth peanut butter.

3 tbsp olive oil

Gently heat the oil, add the onions and soften them.
