Combine the bread crumbs, 1/2 cup Parmesan cheese and melted butter in a bowl and mix well. Press the mixture evenly over the bottom of 4 greased 7 x 11-inch baking pans. Layer the Swiss cheese, scallions and shrimp over the crumb mixture and pat firmly. Beat the eggs in a large bowl. Add the cornstarch and beat until blended. Add the milk and beat until well mixed. Add the nutmeg and cayenne. Pour over the layers. Sprinkle with the remaining 1/4 cup Parmesan cheese. Bake at 400u00b0 for 15 minutes. Reduce the oven temperature to 350u00b0. Bake for 15 minutes longer. Cool for 20 minutes or longer. Cut the baked layer in each pan into 24 squares. Yield: 96 servings.
