Preheat oven to 450 F. On a rimmed baking sheet place tortilla pieces.

Bake them for about 5 minutes, flip over, and bake for 5-10 minutes more until crispy and golden.

Wash shrimp.

Dry them well and sprinkle them with the Old Bay seasoning.

In a cast iron skillet over high heat add 1 tablespoon oil.

When oil is hot add in shrimp.

Sear for 2 minutes on the first side and flip over.

Sear 2 more minutes or until opaque.

Remove from skillet, chop shrimp into bite-size pieces, and cover to keep warm.

Remove tortilla chips from oven.

On the same baking sheet assemble nachos by layering on the ingredients.

Take half of the chips off of the tray and spread the remaining chips out.

Over the layer of chips add a sprinkling of cheddar and pepper jack cheese, beans and corn.

Repeat with another layer of chips, cheese, beans, corn, and end with shrimp over everything.

Bake for 5 minutes until cheese is melted.

Remove from oven, place baked nachos on a platter and top with tomatoes, cilantro, onions, avocado, olives, pickled jalapenos, and cojita cheese.

Oh, and top with salsa.

Finish her off with a squeeze of fresh lime juice.
