Heat the oven to 150c/fan 130c/gas 2.

Put the flour in a bowl & rub in the butter to make fine crumbs.Stir in sugar.

Work the mixture until it forms a ball.

Turn out on worksurface and knead briefly until smooth.

Work into a round & roll & pat out on a very lightly floured surface to a 18 cm round.carefully lift or slide the dough on to a baking sheet( no need to grease) & flute the edges with your fingers.Mark the circle into eight triangles with a knife, cutting all teh way through.

Prick over with a fork.

Bake for 30-35 minutes - it should be very pale.

While still warm, cut through the markings,then sprinkle with sugar.
