Sensational Veal Stew

   Simmer veal in butter over low heat, uncovered, 10 minutes. (DO NOT BROWN).

   Add onions, mushrooms, garlic salt and pepper. Cook uncovered for 10 minutes.

   Sprinkle flour over meat, stir to blend. Add chicken broth, wine, carrot, leek and celery and herbs. Cover and simmer for 30 minutes. (Or until meat is tender)

   Remove Carrot, leek and celery and bay leaf. Stir in lemon juice.

   Beat together egg yolk and cream. Stir some of the hot mixture into the egg and the return all to hot mixture stirring constantly. Heat until bubbly.
