Scampi-Style Garlic Gorgonzola Potatoes

   Heat oven to 350 degrees F. Spray a 2 quart glass casserole with nonstick cooking spray.

   In a large bowl combine all hash brown ingredients and mix well.

   Let stand while you prepare scampi-style sauce.

   In small saucepan over medium low heat, combine 1/4 cup butter, 4 oz.

   goat cheese, 3 T. minced garlic, 1 cup chicken stock, 1 cup heavy cream, and lots of white pepper until well mixed and slightly bubbly.

   Pour this mixture over potato mixture and stir well.

   Spread into prepared baking dish and, if desired, top with 3/4 cup flavored bread crumbs spreading evenly.

   Bake for 50 minutes.
