Scallops With Crunchy Orange Fennel

   Cut the washed fennel into very small pieces. Set aside. In a bowl put 2 tablespoons of canola oil, the juice of half an orange, salt and pepper. Add the fennel and allow to stand for 20 minutes so that it absorbs the flavors. Preheat the oven grill. On a tray place the sheets of wonton dough and oil them with a brush. Add fennel seeds. Cook on the grill. In a skillet heat the butter to brown the scallops on both sides. Season with salt and pepper.

   On a plate, make a little salad of fennel.

   Top it with a crisp wonton on top.
