Season pork with salt, pepper and garlic.

Brown pork 2 minutes on one side in the extra virgin olive oil.

Flip pork and add the onions, browning for another two minutes.

Add remaining ingredients to a pressure cooker, set to pressure 80 or Stew mode, set timer for 40 minutes to cook.

After 40 minutes, turn cooker off, release pressure.

At this point you can strain the juices, simmer, adding cornstarch to thicken the broth to a gravy consistency.

I usually add the onion back in the gravy because I love it over mashed potatoes.

Note: recipe can be adapted to a slow cooker, cooking on high for one hour and then low for approximately 6 hours or until done.
