Start the broth boiling in a 4-quart saucepan. puree and add the broccoli to the boiling broth let it cook while you take apart the garlic head, skin all the cloves, and process it into bits; Ditto the onion. Add it to the soup -- let it boil; the idea is to shortcut the cooking process for the soup by rendering the veggies into the tiniest pieces possible. Stir, and simmer -- but keep it bubbling. Add the rice -- this will make it creamy without using cream. Add water if it gets too thick. After about 20 minutes, add the cheeses and the pepper, stirring all the while. once it's reached a fragrant and wonderful state, plug in the plunge blender and blend it until it's smooth. Finish with a dash of herbed olive oil, and serve with fresh bread and butter. Marvelous.
