Sausage Zucchini Bake – a delicious recipe with Rice, cream of mushroom soup, onion, cottage cheese, ricotta cheese, oregano. Easy to follow and perfect for any occasion.

1 cup uncooked Minute Rice (may substitute brown)
1 (14 ounce) can cream of mushroom soup
1 medium onion, diced
1 cup cottage cheese
1 cup ricotta cheese
12 teaspoon oregano
1 teaspoon crushed minced garlic
1 lb Italian sausage (browned)
2 cups chopped zucchini
1 cup shredded cheese (Colby or cheddar)
1 (6 ounce) canchopped mushrooms (optional)

Preheat oven to 350 degress.

Mix first 6 ingredients in bowl.

Stir well.

Then add sausage and zucchini.

Put in 9x13 pan, spread evenly and cover with foil.

Poke with a few air holes and cook for 45 min at 350 degrees.

Remove from oven, sprinkle cheese evenly on top, recover and cook 15 more minutes.
