1/4 cup butter
1/4 cup all purpose flour
2 cups milk
3 ounces white cheddar cheese . grated
5 sausages thick, parboiled, drained
14 ounces diced tomatoes with basil
1 clove garlic peeled and finely chopped
1 onion small, finely chopped
1 eggplant thinly sliced
2 potatoes peeled, thinly sliced
salad or vegetables, to serve

Preheat oven 350u00b0F. Lightly grease a shallow 8 cup baking dish.

CHEESE SAUCE: Melt butter in a saucepan. Stir in flour. Cook, stirring, for 1 minute. Remove from heat. Slowly mix in milk, stirring until smooth. Return to heat and cook, stirring, until mixture boils. Cook for 3 minutes. Remove from heat and add half the cheese. Season to taste.

Halve sausages lengthways. Arrange half in dish. Top with tomatoes, garlic and onion. Cover with eggplant, potato and remaining sausage. Pour cheese sauce over. Sprinkle with the remaining cheese.

Bake for 1 hour, until golden. Serve with salad or vegetables of choice.
