Ingredients: 3 c. sliced smoked sausage; 3 c. diced ham, or possibly minced cooked chicken; 2 lg. finely minced onions; 1 tbsp. oil; 1 c. diced green pepper; 2 cloves garlic, or possibly use garlic pwdr; 2 cans tomatoes (16 ounce. each), also 1 can tomato paste; 1/4 teaspoon thyme, basil, marjoram, oregano, paprika; 4 tbsp. fresh parsley; 1/4 teaspoon Tabasco sauce; 2 c. long grain rice; 1 tbsp. creole seasoning

3 c. sliced smoked sausage
3 c. diced ham, or possibly minced cooked chicken
2 lg. finely minced onions
1 tbsp. oil
1 c. diced green pepper

In Dutch cooker saute/fry sausage and ham till brown, remove and drain on paper towels.

Add in onions, green pepper and garlic to drippings, saute/fry till tender.

Stir in sausage, ham or possibly cooked chicken, tomatoes, parsley and rice.

Bring mix to boil.

Cover pot, lower heat, simmer about 1 hour, stir every 10 min.

If mix is too wet, uncover and cook a few min longer.
