Preheat the oven to 350u00b0F. Cook potatoes in a saucepan of boiling salted water 15-20 mins, until tender.

Meanwhile, melt 2 tbsp of the butter in a medium saucepan on high heat. Saute leek 3-4 mins, until tender. Add flour and cook, stirring, 1 min. Remove from beat. Gradually add milk, stirring until smooth. Return pan to medium heat and cook, stirring constantly, until sauce boils and thickens. Reduce heat to low and simmer 3 mins. Season to taste. Cool slightly. Stir in salmon, spinach and dill. Spoon into a shallow 2-quart baking dish.

Drain potatoes and mash well. Stir in egg and remaining 1 tbsp butter. Season to taste. Top salmon mixture evenly with mashed potatoes, roughing up the surface with the back of a spoon. Sprinkle with combined Parmesan cheese and breadcrumbs.

Bake 25-30 mins, until heated through and the top is golden. Serve with steamed green beans and lemon wedges.
