Ingredients: 3 -4 lbs pork loin roast, boned and rolled; salt & freshly ground black pepper; ground cumin; beef stock (or as needed) (optional); 3 tablespoons sour cream; ½ tablespoon cornstarch; watercress; 1 cup dry white wine; ½ cup wine vinegar; 1 large onion, coarsely chopped; 2 carrots, coarsely chopped; 2 celery ribs, coarsely chopped; 2 cloves garlic, coarsely chopped; 1 bay leaf; ½ teaspoon thyme; salt; 6 -8 peppercorns

FOR THE MARINADE, combine all of the ingredients and simmer them for about 15 minutes in a covered pan.
