Sliced Steak, Florentine Style

   Grill the steak until it is rare, but don't put any olive oil or seasoning on it. Slice the steak and put the slices on a plate.

   Meanwhile, in a small frying pan over low heat, heat some olive oil with the rosemary and sage leaves. Keep over low heat long enough for the olive oil to get so hot it creates a lot of smoke and the herbs begin to burn. Immediately pour the oil and herbs over the steak. The herbs will perfume the meat and the hot oil will finish the cooking perfectly. Pour off the excess oil and serve.
