Preheat oven to 375 C. Peal potatoes and cut them into serving size pieces. Don't make them too small. Put potatoes into a pot of salted water and boil for 2 minutes. Drain off the water then put into a heavy pot preferably cast iron. Sprinkle the cayenne pepper into the butter then pour the mix over the potatoes. Stir the potatoes to make sure they are well coated in the butter. Salt and pepper the potatoes liberally then transfer the pot without covering to the oven. Leave for about 1 hour or longer if you want the outside to be crispier. Every 20 mins or so take the pot out of the oven and gently turn the potatoes using a spatula. Do this carefully because they can be quite fragile and you don't want them to break apart.
