Preheat oven to 350u00b0F. Place 4 - 4 oz souffle dishes in a roasting pan.

In a small bowl, combine vanilla bean seeds, milk, egg and sugar. Set aside. In a separate bowl, combine rice and raisins. Divide rice mixture between prepared dishes then pour milk mixture over top. Add enough boiling water to roasting pan to come halfway up sides of dishes and bake for 45 mins, or until just set. Remove from oven and let cool for 10 mins.

Meanwhile, place pears on a baking tray and drizzle with lemon juice and maple syrup. Bake along with rice pudding for 30 mins, turning occasionally, until just tender. Increase heat to 475u00b0F and bake for another 5 mins, or until lightly browned. Serve pears with warm or cooled rice pudding.
