Peel the kiwis.

Cut one into thin, round slices.

Set 9 slices aside.

Mince the rest of the slices and the other kiwi.

Place the butter in a heatproof dish, and microwave for about 40 seconds at 500-600 W to melt.

Preheat the oven to 180C.

Break the eggs into a bowl, and put it over a double boiler.

Add the granulated sugar in 2-3 batches.

If you are using a hand mixer, whip at a high speed.

When the mixture is warm to the touch, remove from the double boiler.

When it starts to turn white and thick, reduce the speed of your hand mixer and continue to mix for another 3 minutes to create a smooth texture.

Add the yogurt and lemon juice, and mix.

Sift in the rice flour and baking powder, and fold them in with a spatula.

Add the minced kiwis and the butter from Step 2, and mix evenly.

Pour into a pan lined with baking parchment, and bake in a preheated oven for 10 minutes at 180C.

Then, remove from the oven.

Arrange the kiwi slices on top, and bake in the oven again for another 20 minutes at 180C.

When baked, remove from the pan.

Open up the parchment paper, and let it cool.

Cut into pieces, and serve on a plates.
