Red Wine Salt

   Place 1 tablespoon of wine in a bowl, or deep dish. Put the salt on top, and mix with the wine. The salt crystals immediately begin to brown, so it is easy to check when the wine is well absorbed. Check whether you need to add some more wine.

   For a few days stir occasionally with a spoon, or shake the container so as to dry the wine. When it is dry, mix in the oregano and the bay leaves.

   Store in a sealed container.
