1
Let me start by saying, that these measurements are guesstimates.
-
2
Im a dash-of-this, little-of-that kind of cook.
-
3
First up, fry the bacon in a skillet on medium heat until crisp.
-
4
Remove it to a stack of paper towels to drain once it is done, but DO NOT drain the pan!
-
5
You are, however, allowed to turn the stove off.
-
6
It will be a couple of minutes until you get back to it.
-
7
Mix flour, garlic salt, pepper and Lawrys together.
-
8
I put mine on a plate and mix with a fork.
-
9
On another plate, whip the eggs and milk together.
-
10
Put the chicken in a large plastic bag and pound it out with a meat tenderizer to about 1/2 inch thick so that it can cook through in the skillet.
-
11
At this point, go ahead and turn the stove back to medium-high heat.
-
12
If there isnt a layer of grease coating the bottom of the pan from the bacon, go ahead and add in a little vegetable oil.
-
13
Put each chicken breast directly into the flour mixture.
-
14
Flip it over a couple of times to make sure the whole thing has a layer of flour on it.
-
15
Gently shake it off and dunk it in the egg mixture.
-
16
Flip it over a few times to make sure the whole thing has a layer of egg on it.
-
17
Now, back into the flour.
-
18
Make sure it has a good coating of flour, then send it to the skillet.
-
19
IMPORTANT: Chicken must cook thoroughly!
-
20
For me, this took about 4 minutes on the first side, then I flipped it over for about 3 minutes on the other side, but it all depends on how thick your chicken is.
-
21
Remove the chicken to a paper towel to drain.
-
22
Turn the broiler of your oven on the Low setting.
-
23
Get out an over safe dish to assemble your masterpiece.
-
24
I went with a grungy cookie sheet.
-
25
Ok, layer like this:
-
26
First goes the chicken fried chicken.
-
27
Next, slather a heaping tablespoon or two of Ranch dressing on each piece of chicken.
-
28
Then, slap a couple of slices of bacon on top.
-
29
Lastly, top it off with the mozzarella cheese slices.
-
30
Place the whole thing in the oven for just a minute or two.
-
31
You have to watch it; broilers can be tricky!
-
32
When the cheese is melty looking and delicious, take it out and Voila!
-
33
Ranch Chicken Fried Chicken!
-
34
Variation: add a layer of freshly diced tomatoes under the cheese.
-
35
I didnt have any tomatoes... so I left that part out this time.
