For the vinaigrette, whisk together the vinegar, 1 tsp mustard, and honey. Beat in 4 tbsp oil, bit by bit and season with salt and pepper. Add in the finely chopped onion.

Heat 4 tbsp oil in a large pan and fry the bread on both sides, with the remaining garlic, for about 2 minutes. Season with salt and pepper and half of the chopped basil. Lightly dress the lettuce leaves with the vinaigrette, then set aside.

Heat 2 more tbsp oil in the pan, pierce the mushrooms, prawns and onions with skewers and fry on both sides for about 5 minutes. Serve the skewers on a bed of salad, drizzled with the vinaigrette and the bread and aioli on the side. Garnish with remaining basil.
