POTATOE SALAD with SOFT CHEESE

   Boil Potatoes on medium until they are firm but not soft,While potatoes cool Chop red onions into small pieces.

   Cut Potatoes into bite size Cubes.

   In a large bowl Add the Vinegar and add potatoes and stir lightly to cover cubes in vinegar.

   In another bowl add the Mayonaise and Soft cheese and the virgin oil and toss it all until its mixed,add it to the potatoes along with the red onions add salt and pepper and sprinkle over the top with Parsley.
