Potatoe Pancakes(Used Mashed Potatoes)

   Mix potatoes and egg with a fork until well blended. Add flour and onion and mix well. Mixture will be very stiff.

   Pour oil into large skillet to coat the bottom and heat it over medium heat. Line a plate with paper towels.

   Scoop out a heaping tablespoon of mixture and carefully place it in the hot oil. Mash to flatten about a 1/4 inch

   Fry until they are lightly browned on the bottom-3-5Min.Flip and lightly brown on the other side--2-3 min.
