Potato Soup – a delicious recipe with new potatoes, carrots, onion, salt, milk, bacon. Easy to follow and perfect for any occasion.

Servings: persons

5 large new potatoes, chopped with skin on
2 - 3 carrots, chopped
1 onion, chopped
1 1/2 tsp salt
2 cups milk
6 - 7 slices bacon
2 stalks celery, chopped
1/4 tsp pepper
2 cups half and half
shredded cheese for garnish

Cook potatoes and carrots in water until tender.

Drain.

Saute bacon until crisp.

Reserving 2 Tbsp drippings, then discard remainder of drippings.

Crumble bacon.

Saute onion and celery in bacon drippings.

Combine all ingredients, except cheese, and simmer.

You may add cornstarch to thicken.
