Potato And Leek Soup

   Cut leeks into quarters or halves longways (depending on size) and then into 1cm dice.

   Cut potatoes and swede into half cm dice.

   Cut garlic into 1mm dice (or just grate it).

   Sweat the leeks in the oil until very soft, but not brown.

   Add the potatoes, swede and garlic and mix well.

   Add the chicken stock and a good grind of salt.

   Bring to boil and then reduce to simmer for 20 minutes or until swede and potato are cooked through.

   Blend with stab blender or leave chunky.
