For the filling, combine pork, onion, garlic, ginger, 1 tsp sesame oil, 1 tbsp oyster sauce, peanuts, carrot and egg white in a medium bowl. For each wonton, place a wonton wrapper on a flat surface. Spoon 2 tsp filling into the center and fold wrapper over to form a triangle. Pinch edges to seal.

Add 4 inches of oil to a large, heavy-based saucepan. Heat over medium-high heat and deep-fry wontons, in batches, 2-3 mins, until golden and cooked. Drain on paper towels. Reheat oil between batches if necessary.

For the dipping sauce, whisk remaining sesame oil, 1/4 cup oyster sauce, hoisin sauce, soy sauce and 1 tbsp water in a small serving bowl. Sprinkle with sesame seeds. Serve with wontons.
