Combine ground pork, 2 tsp soy sauce and garlic in a bowl. Cover with plastic wrap and chill for 15 mins to marinate.

Heat a wok or large frying pan over high heat. Add 1 tbsp oil and swirl to coat surface. Working in batches, stir-fry pork mixture for 2-3 mins, breaking up any lumps, or until browned. Transfer to a heatproof bowl.

Add remaining oil to wok. Stir-fry onion for 1-2 mins, or until tender. Add pepper, pea mix and bamboo shoots. Stir-fry for 2-3 mins, or until tender. Return ground meat to wok along with carrot, rice and shrimp. Stir-fry for 2-3 mins, or until heated through. Add remaining soy sauce and stir-fry for 1 min, or until combined. Remove from heat and add bean sprouts. Transfer to serving bowls and top with scallion. Serve with shrimp crackers.
