8 ounces button mushrooms, sliced
½ cup chicken broth

1 red pepper, sliced
¾ cup sour cream
2 green onions, sliced

Slice pork into bite sized strips.

Lightly coat a large frying pan with oil and set over med-high heat.

Add pork and saute until it loses it's pink color, about 2-3 minutes.

Add onion, jalapeno, mushrooms, broth and seasonings.

Bring to a boil.

Then cook, uncovered and stirring occasionally, until pork is almost cooked through, about 3-4 more minutes.

Add peppers and stir frequently until tender-crisp and pork is cooked through, about 2 minutes.

Remove from heat and stir in sour cream and green onions.
