For Gingered Bread Popcorn Balls, Line a baking sheet with parchment paper and set aside.

In a deep saucepan, combine the butter, molasses, corn syrup, ginger, cloves, nutmeg, cinnamon and salt. Stir with a heat-safe spatula or a wooden spoon until the butter has melted and the mixture comes to a boil.

Stir constantly while the mixture boils for five minutes. Remove from heat and stir in the baking soda. The mixture will foam and fizz a bit, this is totally normal, just continue to stir until the mixture settles to a thick syrup, approximately 1-2 minutes.

Pour one quarter of the bag of Gaslamp Popcorn into a large, deep bowl then pour a quarter of the gingerbread syrup mixture over the popcorn and use a spoon or rubber spatula to stir the popcorn until it is evenly and thoroughly coated in the gingerbread syrup.

Pour in another quarter of the bag of popcorn and another quarter of the syrup and stir to combine.

Lightly butter your hands then grab a handful of the gingerbread popcorn, using both hands to form it into a ball. Add more popcorn for a larger ball. Place the popcorn ball on the prepared baking sheet to set. Continue making popcorn balls until you are out of popcorn.

Then pour more popcorn into the bowl and more syrup, repeating the process above until all of the popcorn has been made into balls. Allow the popcorn balls to set for at least 30 minutes. Press any loose bits of popcorn back onto the balls as the set if they become loose.

You can also decorate them any way you like! Press a lollipop stick into each ball or wrap in saran wrap and tie with ribbons to make a festive presentation!

Store in an airtight container for several weeks.
