Polly'S Rice

   The rice is: Zafarani Aged Basmati Rice - available at costco in a 20 pound bag. I know it sounds ridiculous, but that's costco for you! I store a bunch in a really large plastic container with the following directions, depending on how much rice I'm making:

   1 cup rice

   1.5 cups water

   1 T. vegetable oil

   1/2 T salt

   1.5 cups rice

   2 1/4 cups water

   1 1/2 T. vegetable oil

   3/4 T. salt

    2 cups rice

    3 cups water

    2 T. vegetable oil

    1 T. salt

    To prepare, just rinse the desired amount of rice using a sieve. Put the rinsed rice in a pan with the appropriate amount of water, oil and salt. Cook over high heat/boil without lid for about 5-7 minutes, stirring a couple of times. Turn the heat way down to simmer and add lid. Simmer 5 -7 minutes with the lid on. Off the heat and stir. Enjoy!
