Place milk, 1 cup water and a pinch of salt in a medium saucepan on high heat. Bring to a boil. Reduce heat to medium. Gradually add polenta in a thin, steady stream, whisking constantly, until smooth. Reduce heat to low.

Cook polenta, stirring, for 5-10 mins, until polenta comes away cleanly from side of pan. Stir in cauliflower, cheese and peas. Use a wet spatula to spread polenta into prepared pan, smoothing the top. Set aside to cool.

Cut polenta into 3-inch long fries. Heat oil in a skillet on high heat.

Cook polenta fries in batches for 3 mins each, turning often, until golden and crisp. Season with sea salt flakes.
