1. Place your oven rack to 4-6 inches below your broiler. Turn on your broiler........let it get really hot. Next put your Emil Henri Planchar on your BBQ, pour on a light coating of oil and heat it up for about 15 minutes.

2. Place a large flour tortilla with little bubble down on a wood pizza paddle. Top the tortilla with 1/2 of the sauce, 1/2 of low fat mozarella and top with remaining tortilla, again with little bubbles down.

3. Place this on the stone in the BBQ, close the top and let brown, say 1 1/2 to 2 minutes minutes. Turn over and let brown again, another 1 1/2 minutes.

4. Take out of the BBQ and slide onto a cookie sheet. Top with remainder of sauce, cheese, basel and pepperoni or any other toppings.

5. Place under broiler and broil 3-4 minutes with the door open, until cheese is browning.

6. Take out of the oven and slide back onto the pizza paddle to cut and serve.
