In a large heatproof mixing bowl, add pudding mix, marshmallow cream and white chocolate. Pour boiling mixture over these ingredients. Beat for about 1 minute until combined and chocolate is completely melted. Fold in pistachios. Pour into a 9-inch parchment paper-lined square dish.

Melt dark chocolate (either using the microwave, for 30 second heat bursts at a time or in a double boiler). Spread the melted chocolate on top of the fudge and refrigerate about 2 hours until set. Cut and enjoy.
