Pink Shortbread Cookies

   Preheat oven to 180 Celsius.

   Cream the butter and sugar. Add the food coloring and vanilla. Mix, adjusting color as necessary.

   Add the flour and mix into a dough. Turn out onto a table and knead. Roll out the dough and form into shapes with a cookie cutter.

   Place the cookies onto a silicone or parchment paper-lined baking sheet. Bake for 25 minutes until lightly golden on the bottom.

   Remove from oven and let cool completely before sprinkling with confectioners sugar.
