The rice: cook the rice according to package instructions or in a rice cooker.

The chicken: saute the defrosted chicken breast in a little bit of olive oil. Season to taste with the salt, pepper, garlic powder, oinion powder, curry powder, chili powder, and paprika.

While the chicken and rice are cooking put a handful of baby spinich on each plate.

When the chicken is cooked take it out of the pan and set it aside. Put the cooked rice in the chicken pan and saute briefly to allow the rice to season.

Take the seasoned rice and put it on top of the baby spinich.

Now put the chicken back in the pan and saute briefly with the salsa.

Lastly, place the chicken on top of the rice and sprinkle the cheese over the top of each plate.
