Place the noodles in a mixing bowl and soak according to package instructions. Meanwhile place the tamarind paste in a bowl with 5-6 tbsp boiling water and mash with a spoon.

Heat the oil in a non-stick pan add the garlic and cook for 1-2 mins. Add the shrimp and stir fry for 2-4 mins, until cooked through. Remove from the pan. Add the chicken to the pan and fry over high heat for 3-5 mins. Meanwhile, drain the noodles and rinse under cold water. Add the noodles, egg, spring onions, chili and bean sprouts to the pan and stir-fry for 4-5 more mins.

Mix the shrimp, tamarind, soy sauce, fish sauce and sugar into the pan. Divide between 4 bowls and garnish with the chopped peanuts and Thai basil.
