Preheat the oven to 425u00b0F. Bring 1 cup water to a boil with 2 tsp of the sugar, the butter and a pinch of salt. Pour in all the flour and stir vigorously until the dough comes away from the side of the pan. Place the dough in a mixing bowl and immediately stir in one of the eggs. Leave for 10 mins, then stir in the remaining egg.

Use the dough to fill a piping bag with a large nozzle. Pipe 12 balls onto a baking sheet lined with parchment paper. Bake for 20 mins. Remove and leave to cool on a wire rack.

Meanwhile, whip the cream with the remaining sugar and stir in the chopped mint. Cut the petit choux in half horizontally. Put a spoonful of whipped cream on each base, top with a couple of slices of strawberry, then top with the upper halves of the petit choux. Serve decorated with the reserved mint leaves.
