Wash and cut of the top part of the peppers, clean inside while keeping them whole. Separately, warm 4-5 tablespoons of oil in a larger pan or pot, add onions and garlic while stirring. When onion is softened, add mincemeat, salt, pepper and any other spice as per taste. Stir briefly and add rice, half of the bacon amount and one potato cut in small cubes.

Use the rest of the oil to oil the casserole dish and cut the rest of potatoes to put on the bottom, add some of the bacon and sprinkle with a pinch of salt. Fill the peppers with mincemeat mix and put the top part on the top. Put them in the casserole dish and add rest of the bacon on the top.

Preheat oven to 400u00b0F, close the casserole dish with lid and bake for 45 minutes. Serve warm. Can be served with 2 tablespoons of creme fraiche on the side, per liking.
