Pear And Goat Cheese Salad

   Sear the slices of goat cheese with a kitchen torch.

   Make a reduction of balsamic vinegar by heating it in a pot on medium heat until 1/3 of the original volume remains.

   Make a bed of lettuce, then a layer of pear and the seared goat cheese on top. Season with salt and pepper and dress with the balsamic vinegar reduction and olive oil.
