Potatotes - cubed
1 tsp aleppo pepper
1/4 cup white wine
1/4 cup olive oil
2 tomatoes - finely chopped
1 Tbsp olive oil
1 tsp paprika
1/2 small onion - minced
1/2 tsp chili powder
hot sauce, to taste
1 clove garlic, minced
parsley
1/2 tsp ground cumin
1 Tbsp tomato paste

Pre-heat oven to 425 degrees.

Put potatoes in a baking dish, pour the olive oil over them, sprinkle with salt, and toss to coat. Bake for 40 minutes, turning once, until potatoes are golden-brown.

FOR SAUCE: heat olive oil in a pan over medium heat. Add onion. Cook of r3 minutes. Add garlic, cumin, aleppo, chili powder, paprika, and hot sauce. Cook 1 minute. Increase heat to high, add wine, and simmer 30 seconds. Reduce heat to medium. Add tomatoes and tomato paste. Cook 10 minutes, until mixture is thick. Process mix in blender until smooth. Add parley and salt to taste.

Pour over potatoes and serve.
