Parmesan Chicken

   Preheat oven to 200degC (180degC fan forced).

   Whisk mustard, juice and garlic in a shallow bowl.

   Combine breadcrumbs, parmesan and parsley on a large plate.

   Dip chicken in mustard mixture, then in breadcrumb mixture to coat evenly.

   Place on a plate.

   Cover with plastic food wrap, chill for 15mins.

   Heat oil in a large frying pan over moderate heat.

   Cook chicken for 1-2mins each side or until golden brown.

   Transfer to a baking tray.

    Bake for 10mins or until cooked.

    Serve with salad and roast baby potatoes or whatever takes your fancy.
