Oven-Roasted BBQ Chicken Quarters

   Divide chicken quarters evenly among 3 parchment paper-lined full sheet pans (or 1 half sheet pan for trial recipe).

   Bake in 350F-convection oven for 40 to 45 minutes or until meatiest part of chicken registers at least 165F when tested with a meat thermometer.

   Transfer chicken to 4 full (2-inch) hotel pans (or 1 half 2-inch hotel pan for trial recipe), dividing the chicken evenly among the pans.

   Pour 1 qt.

   of the barbecue sauce evenly over chicken in each pan (or all of the barbecue sauce over chicken in pan for trial recipe).

   Bake an additional 5 minutes.
