Oven Fried Catfish

   In a shallow bowl, beat egg and milk together. In another shallow bowl, combine corn meal and other dry ingredients. Dip each fillet in egg mixture and coat thoroughly in the meal mixture. Spray a shallow pan with cooking spray and add the olive oil making sure bottom of pan is coated. Place fish in a single layer in the pan. Bake at 500u00b0 about 12 minutes or until fish flakes easily with a fork.
