Oven Baked Chicken Nuggets

   Preheat oven to 180 - 200 degrees celsius.

   Line the tray with baking paper and spray a layer of oil over it.

   Marinate the chicken pieces with yoghurt, lemon zest, pepper and salt. Marinate at least 20 minutes.

   When you're ready to cook, dip the chicken in the panko breadcrumbs.

   When the crumbed chicken nuggets are ready to go into the oven, spray another layer of oil over them. This is to ensure the breadcrumbs will crisp well in the oven with the aid of the oil.

   The cooking time depends on how thick you actually cut the chicken i.e. 5 minutes each side for 1 cm thick.
