Preheat oven to 375u00b0F. Line a baking sheet with parchment paper. For the stuffing, heat half the olive oil in a frying pan on high. Saute bacon and onion 2-3 mins, until onion is tender. Transfer to a bowl. Process baguette pieces in a food processor until crumbs form. Add to bacon mixture, along with marmalade, pistachios and thyme. Season to taste and mix well.

Butterfly chicken breasts and spoon 1/4 of the stuffing onto one end of each. Roll up and secure with toothpicks. Heat remaining olive oil in pan. Sear chicken all over. Transfer to a baking sheet, season and bake 10-15 mins, until cooked through. Cool 5 mins, then slice. Serve with mashed potatoes, gravy and salad.
