Monterey Jack cheese, grated; 1/2 c. butter (1 stick); 1 large onion, minced; 1 1/2 lb. mushrooms, sliced thin; 2 large cloves garlic, minced; 4 eggs; 1 c. milk; 6 slices egg bread (1/4-inch cubes, white bread is okay); salt and pepper; pinch of nutmeg; pinch of chili powder

1 large can yellow hominy
1 pt. sour cream
1 can Ortega chilies, chopped

Melt butter in large skillet over medium heat.

Add onion and saute about 5 minutes until tender.

Add mushrooms and garlic and saute about 3 minutes.

In a bowl, combine eggs and milk; add bread and blend in seasonings.

Add mushroom mixture and stir gently.

Taste and adjust seasoning.
