1/4 cup mashed cooked yam
1/2 cup dried cranberries
1/2 cup dried currants
1/4 cup candied orange peel
1/2 cup chopped blanched almonds
Zest of one medium lemon (about 2 teaspoons)
Powdered evaporated cane juice, for dusting loaf

Transfer the loaf to a baking sheet, and bake for about 1 hour and 10 minutes, or until golden and firm to the touch.
